Queijadinha - Brazilian Coconut Muffins
In line with our Big Rio Run 2022, this time we present a gluten-free dessert that is also a delicious snack in winter.
Queijadinha is a gluten-free coconut cake that takes less than 30 minutes to prepare with 4 ingredients. It looks like a muffin but has the consistency of a powdery pie filling.

- 1 can sweetened condensed milk (14 oz)
- 1 cup sweetened coconut flakes
- 2 egg yolks at room temperature and strained through a sieve to remove the clear yolk membrane
- 2 teaspoons pure vanilla extract
Preheat the oven to 180 degrees. Line a mini or standard muffin baking pan with paper baking cups. In a medium bowl, mix all ingredients until homogeneous.
Using a cookie scoop or ice cream scoop, fill 3/4 of the paper cups with the batter. Remove any possible drips from the baking dish with a damp paper towel.
Let bake for about 13 minutes (mini) or 20 minutes (standard size). Remove from oven, let cool and enjoy!
Note: The muffins can be served warm or at room temperature.
Result: approximately 24 mini quueijadinhas or 8-10 standard quueijadinhas.
Store quéijadinhas in an airtight container or Ziploc bag at room temperature. Consume within 2-3 days. Do not freeze as this will change the consistency!
Queijadinha is a type of baked treat that originated in Portugal and is very popular in Brazil. There are many types of "Queijadinhas", but the traditional version is made with shredded coconut, cheese, sweetened condensed milk, sugar, butter and egg yolk.
If you want to add 1 or 2 tablespoons of grated parmesan cheese to our recipe, go ahead. This will make our Queijadinha de Laranja a little less sweet.
